Itasca State Park has a drive you shouldn’t miss: Wilderness Drive – A narrow one-way road that twists and turns through a couple of thousand acres of pine trees. I imagine Spring to be amazing here, but making the journey here for the Fall Color season was absolutely worth the spend. Even better, we decided to bike this road, and some of the other bike trails in the park. I would not visit this particular park any other way. We had so many opportunities to stop and look that we would not have had if we had been in our truck.
Now, there are many other activities available here in this area, so we are excited to the upcoming days to check these out too. Stay tuned for more. Here’s the video link:

I must have these at my next property. I’m obsessed!
Working on Video, but Had to Eat Dinner, so here it is…
I have been working on a yummy garlic sauce for pasta for years, and by years I mean at least 15 years of trial and error – never anything icky comes out, but definitely, I have been searching for a taste that meets my hunger.
I have been trying to work on my last #highpointersclub hike to Oklahoma’s High Point video, but the “virus” took me down and I am just now getting back to myself.
And…by getting back to myself, I mean that I am currently craving some delicious pasta, and I am not willing to go to a restaurant to find it at this point.
So…here is my #cleanouttherefrigerator #getmypastafix #feedmybelly solution – and, as is my SOP, feel free to add or subtract your favorite ingredients and make this recipe your own…:
PREPARED IN ADVANCE:
1 lb boneless-skinless chicken chopped into 1″ cubes, or desired bite-size
2 tbsp favorite Cajun Seasoning. (I’m using this delicious Cajun Seasoning from Troyer’s Country Market in North Carolina – I don’t see this blend on their current listing, but use your favorite blend and season to your taste. I add liberally.
Cook the chicken cubes with the seasoning, drain and place in a bowl, add chopped spinach, lid, and then set aside until ready to add to sauce.
NOODLES:
I use gluten-free spaghetti (my favs), but I think penne or macaroni would also be great – cook as directed – we prefer slightly al dente, but do as you please 🙂
SAUCE:
2 Tbsp Butter
4 cloves garlic
2 Tbsp all-purpose flour
1-3/4 cup Half and Half
1/3 cup freshly grated Parmesan cheese – definitely a freshly grated fan over the table-brands
1-2 Tbsp fresh parsley
Salt and pepper to taste
Melt the butter over medium heat in a large non-stick skillet, then add the garlic and stir for 30 seconds, make sure not to burn the garlic.
Whisk in the flour, and cook for about a minute, stirring constantly.
Gradually add the half and half, and stir occasionally, simmering until thickened. Season with salt and pepper to taste.
Add the Parmesan cheese and parsley, and remove from heat. Stir as it thickens, and add the chicken/greens. Simmer over low heat until the chicken is warmed through and serve immediately.
Dinner was plated with pasta on the plate, smothered with a gooey layer of chicken sauce. And, if you love a buttery chardonnay, splash a bit of that over your sauce and ENJOY.
Although I didn’t have time today, or rather, I didn’t think about it, I know that a fresh loaf of Crusty Bread would be most delish! I think we will try that next week.
